Best Gluten Free Chocolate Chip Cookies

Today I am going to share with you the Best Gluten Free Chocolate Chip Cookie recipe! Chocolate chip cookies are iconic – A favorite amongst households all over the world and known and loved by everyone I know. When I found out I had celiac disease about 6 years ago, it felt like my world came crashing down. I have loved to cook and bake my entire life and was really good at it and now 40 years into life, I had to start over.

Baking gluten free can be a challenge at first as you get to know a different set of ingredients to bake with – mostly flours. The worst part is that with gluten free baking, the cookies or bars may taste good right away, but they dry out super fast…like literally overnight! Or they taste gritty and grainy right away. Chocolate chip cookies are my family’s favorite, so I was not going to give up without a fight. After many tried and not so loved recipe attempts for guten free chocolate chip cookies, I started to play around with recipes and the flours…tweatked them until I finally figured it out.

Mix It Up!

This is a great basic cookie dough so like regular chocolate chip cookie dough, you can mix it up any way you’d like to. Plain ol chocolate chip, white chocolate macadamia nut, you could do white chocolate, orange and cranberry adding in some orange extract or orange zest and some dired cranberries, mix up the chips…use a combo of chocolate, butterscotch, white or peanut butter chips, chopped nuts…the possibilities are endless! So, onto the recipe:

BEST GLUTEN FREE CHOCOLATE CHIP COOKIES

  • 1 C. butter (room tem – not solid but not too soft)
  • 3/4 c brown sugar
  • 1/2 c white sugar
  • 1 egg
  • 1 tsp vanilla
  • Beat these ingredients together and then add…
  • 1-1/2 gluten free flour ( I like King Arthur’s cup for cup or Bob’s Red Mill cup for cup)
  • 1 C Almond flour (this is the secret)
  • 1 tso baking soda
  • 1/2 tsp salt

Preheat oven to 350* and line baking sheets with parchment paper.

Mix well and then add your choice of chocolate chips or other mix ins listed above. I don’t have an exact amount, you just put in the amount you like. I just add how much we like.

Use a cookie scoop (size of your liking). Scoop and bake for 10-14 minutes depending on the size of your scoopa nd enjoy! Make sure to eat one while they are still all warm and messy. That’s when they are the best in my opinon. Just don’t burn yourself!

A Little Chocolate Chip Cookie History For You!

Did you know that the chocolate chip cookie was discovered by mistake? Back to 1930, the chocolate chip cookie was born in the United States by Ruth Graves Wakefield. Ruth was a dietician wo also ran a tourist lodge in Massachusetts. She treated her guests so well creating all of their food and treats from scratch. One day, while she was working on a batch of cookies, she realized that she had run out of bakers chocolate, however she DID have some Nestle chocolate handy, so she chopped it up into little pieces and stirred it into the dough. To her surprise, those delicious little chocolate chunks kept thier shape while baking and cooling. The chocolate chip cookie had arrived.

The cookies gained worldwide popularity when Ruth sold the recipe to Andrew Nestle of the Neslte chocolate company. In return for the amazing chocolate chip cookie recipe, Mr Nestle gave Ruth access to a lifetime supply of Nestle chocolate. The recipe on the back of the Nestle chocolate chips to this day is the same recipe as it was almost 100 years ago.
